Very Lazy Recipe - Gluten free Banana Cake
This amuses me a bit as I share this recipe. I'm not gluten intolerant myself, but my sister is. Whenever I cook for her, I normally make some smug comment about the only intolerance I have, is having to cater for those with intolerances ('aint I a sweetheart!).
Whether you just love a bit of Gluten or not, this is a great recipe. It's super yummy and only takes 5 minutes prep time.
Ingredients:
2 cups Oats
1 tsp Baking Powder
3 ripe bananas (and extra to slice for decoration)
2 eggs
1/4 cup Maple syrup or honey
Pinch of salt
Pop the oats in a food processor and whizz up until fine but not as fine as flour. Next throw all the other ingredients in as if you don't have an intolerance in the world! Blend until mixed well.
Spray a loaf tin with oil spray (or lightly wipe with oil) and pour in the mix. If you feel fancy, decorate the top with banana slices or sprinkle over oats (to make it a little bit naughty I did banana slices and a sprinkle of brown sugar). Bake in the oven at 180 degrees C for 25-30 minutes or until a skewer comes out clean.
It is important to let the loaf cool completely in the tin.
(I put that in bold as if it was life or death. It's not, but it is still important).
If you like cinnamon, you could add a little to the ingredients or sprinkle on top.
